I'd feel a bit nervous about squishing the whole thing down with my knee like that, worried the one pump tube clamps or other bits might damage the canopy.

This has been around a loooong time (much shorter version):



When I bought my Naish Rides (couple of years ago) they came folded like this out of the box so I didnt have any problems folding them. North kites have a deflate on the tip so its easy to roll from one end to the other - especially in high winds

To save on making a video he could have just said,

"fold kite in half then roll up."

I recon, to stop wear in the same spots all the time to vary the way you pack it down. roll for a bit. Then fold and then stuff. repeat

Why do you need to fold your kite this small? never had a problem in the last nine years using the traditional method.
